Sultana Cake


This recipe I adapted from Alex Goh cookbook.It's nice , not too oily.

Ingredients:
(A)
280 gm butter
230 gm sugar ( I used 180gm )
(B)
5 eggs
(C)
1 tbsp glycerine
(D)
200 gm flour
1/2tbsp baking powder
1tbsp milk powder
(E)
250gm sultanas
60gm high protein flour( I used all purpose flour)

Method:


Line 2 (3in x 9in)loaf tins.
Sieve flour and baking powder.
Mix Sultanas with high protein flour.
Pre- heat oven 180 C.
Cream (A) till light and fluffy.
Add (B) slowly and cream till smooth and light.
Add (C) then (D) and mix well blended.
Add the mixed sultanas, till well incorporated.
Pour battter in lined loaf tins.
Bake at 180C for 50 minutes.
Serve.

Dear Yummylittlecooks,
your sultana cake really looks delicious. I would like to try out.
Could i check if the 250gm sultanas are to be mixed with 60gm flour first before adding to the mixture? i.e what about (E)?

Dear Caty,
Yes, mix the sultana with the flour first, i.e (E), then mix into the batter,this to prevent all the sultanas sink.
