Trip to Raub , Taman Negara and Fraser Hill ( Pahang) , Day 2.

Day 2, after taken our breakfast at the hotel, we headed to Taman Negara. Reached there about 12 pm.

We were still not allowed to check in , because all the chalets were still occuppied. We placed our luggage in the office. And.......
We went for lunch at the floating boat restaurant.........we walked down hill.....
And we walked.........
 And we walked........hmmm which one ya?!
Here it is....... 
We reached early, so we must wait for them to cook.This restaurant only serve lunch/ dinner/ breakfast upon orders only.
Worth of waiting, we really enjoyed all their foods, it was so yummy... We took our lunch, dinner and breakfast in this restaurant.
After we had our lunch,Our tourist guide brought us to Canopy Walk.As you can see,we need to ride a boat to the destination, took about 5 minutes.....
Canopy walk? It's a hanging bridge that will be easily shaking.....if you look down , you can only see trees scare huh!
 This is the map, you can see there's 11 hanging bridges and 10 stops........
See, she's only 9 years old, and she felt so excited to walk. I didn't have any chance to turn around and say NO!
Before we started to walk through, we asked our tourist guide how to take the route,and what he said is... for ladies/girls, do the catwalk,but for men,it is a little bit what I mean?!!
Oh my, couldn't believe, she went across...and she walked quite fast......I had no choice but to follow her......
This is the most challenging walk, up the stairs........she didn't dare to turn around for photo......
After the canopy walk, we went for Rapids Shooting.We paid RM 25/person for this event.Unfortunately,we didn't bring along our camera. We had so much fun in Rapids Shooting. 

After, the Rapids Shooting, we went to our chalet and rested, and had our dinner at the same restaurant.

After dinner, we went for Jungle Night Walk, we also didn't take any photos.We're looking for insects, snakes, deers......whatever we could discover through the walk.It was a really good experience and really fun.
That night, we were TOTALLY TIRED, and had a very good rest/sleep.

Trip to Raub, Taman Negara & Fraser Hill (Pahang)

Hi everybody ! After a few days rest from an adventureuos trip to Pahang, I would like to post some photos that my girl and I had been taken.
This is my first post about trip, as I was typing this, I noted that , I made lots of mistake.Not enough photo was taken to share with you.

We ( 40 people of us) departed from Melaka at 6 am ,we headed to Bukit Tinggi for lunch at 11 am. ( sorry , not much photos of Bukit Tinggi)
We reached Bukit Tinggi at 9.15 am, still early for lunch, so we decided to walk around.
 Walk further up can see Balai Polis Bukit Tinggi (Bukit Tinggi Police Station)
 Saw lots of this kind of banana hanging in the stalls. I've never try or seen this kind of banana.
 Lot of passion fruits too.
 After taking lunch we headed to National Elephant Conservation Centre at Kuala Gandah.

Before we can meet the elephants, we need to watch a documentary about why and how they rescued , save and transfered the elephants from other part of jungle to Taman Negara.
 You can feed , take picture, ride or bath with these elephants.
She's so brave hah?! Feed the elephant.My girl said, it's really fun to feed them. Do you see the sticker on my girl's arm? Got 2 kinds of stickers, red and yellow.What's the different? With yellow stickers, you can ride elephant, while red stickers cannot.And they distribute 100 of yellow stickers only, not more than that, means only 100 person can ride the elephants.

You can bath with the elephant, but I think nobody would do'll get

 On that day, the Sultanah Of Pahang also came to visit the elephants.

After visiting those elephants , we headed to Raub for dinner at 5 pm at an Indian Restaurant.After the dinner, we check in hotel. We stayed at Hotel Jelai.The hotel was just so so only.
After we had our bath and rest awhile,at about 8 pm, we headed to my friend sister's  house to eat Durians...hehehe...

The Easiest Shrimp Toast

This is the easiest, quick , simple and yummy snack.
I made deep fried and bake version.
The deep fried version is the best.It has a crispy crust, and chewy shrimp paste.We enjoy this very much.
For the bake version, not nice at all.The bread not crispy but hard, the prawns, yuks.....I advice not to do this bake version.

Ingredients :
200 gm shrimp ,peeled,
6 slices of white bread
1/2 tsp white pepper
1/2 tsp salt
1 tsp cornstarch
Oil for frying

Clean the shrimp. Pat it dry.
Chop /smash /pound the shrimp to become paste form.
Add salt , pepper and cornflour, mix well.
Remove crust from the bread and cut into square.
Sprinkle some cornflour onto each square of bread.
Spread evenly the shrimp paste onto each piece of bread.
Sprinkle some sesame seeds.
Heat the oil in a wok.
Place a few of the shrimp breads, paste side down into the oil.
Fried roughly 1 minutes for each side.
Dish up and drain, place them onto a tray lined with kitchen towel.
Serve immediately.
 These are the baked version......not nice at all.

Almond Cupcake

Hi all, I made this cupcake recipe for breakfast. I made it at night, and serve it in the morning. 
The recipe if from one of the baking class that I attended.These cakes are so soft which are my favourites, but not the buttercream, I found it oily, but anyway, I write down the recipe, maybe you want to try.(different people different taste bud )
I sprinkle some coloured sugar which I bought earlier (store in my pantry for quite long).If you want to make the colour sugar can get the recipe from Anncoo Journal .

160 gm butter  
160 gm caster sugar
3 eggs
1 tsp vanilla
190 gm cakeflour
50 gm ground almond
1/4 salt
2 tsp baking powder
60 ml fresh milk

Sift cake flour,baking powder, stir in salt and ground almond, set aside for later use.
Beat butter and sugar until fluffy.
Add in vanilla and eggs one at a time,mix well.
Mix in the sifted flour and milk alternately, beat till just combined.
Scoop the mixture into a paper cup, about 3/4 full.
Bake 180 C for 20 minutes.
Frost the cupcake with butter cream.Sprinkle some coloured sugar.Serve.

Butter Cream:
150 gm butter
150 gm icing sugar
150 gm cream well
1/2 tsp vanilla essence

Whip butter and icing sugar until soft and light.
Add in cream well and vanilla essence, whip until fluffy.
Ready to use.

"Cik Kong" Spare Ribs

I got this recipe from Hawker's Fair Simplified recipe book.

These spare ribs are sooooo yummy.The meat are so tender, the sauce is so tasty.

600 gm spare ribs/ pork chop, cut into pieces
1 tbsp toasted sesame seed

1 tbsp plain flour
1 tbsp corn flour
1 tbsp shaoxing wine
1 egg
1 tsp baking  soda
1/2 tsp salt
3 tbsp water

2 tbsp black vinegar
2 tbsp tomato sauce
1 tbsp worchestershire sauce
1/2 tbsp chilli sauce
11/2 tbsp sugar
3 tbsp water

Combine spare ribs with marinade and mix well.Marinade for 30 minutes .
Deep fry the marinated spare ribs in a hot oil till golden brown.Dish and drain.
Pour sauce into a clean wok and bring to boil.
Add in spare ribs, and cook over high heat until the sauce thickens.
Dish up and sprinkle some toasted sesame seeds. Serve.

Purple Sweet Potato Angkoo Kuih with Peanut Filling

The recipe from Sonia  and I saw Lena also made these.These angkoo kueh dough were very soft.I used ground peanuts for the filling, so tasty.
I made 1.5 of the recipe and got 30 pieces of angkoo kuih.

Sweet Potato Dough:
450 gm purple sweet potatoes, cut into pieces
300 gm glutinous rice flour
11/2 tbsp rice flour
3 tbsp sugar
41/2 tbsp corn oil
270 ml water, I used 250 ml only

For filling:
300 gm ground peanut
130 gm icing sugar

*Mix ground peanut and icing sugar, set aside for later use.

Steam sweet potatoes till soft, about 15 minutes.
Use a fork , mashed the cooked sweet potatoes.
Add in glutinous flour,rice flour, sugar and corn oil, slowly adding water to mix well till soft dough, keep aside and rest for 30 minutes.Difference sweet potato has difference texture, some soft and watery, do not add all the water at one go, slowly add and knead till a soft dough.If dough is too soft, then you may add more glutinous rice flour
Shape into 36 gm ball.

To shape and cook Angkoo kueh:
Grease the Angkoo kueh mould by brushing some corn oil.
Take the weighted dough, shape it into a bowl , place some mixed ground peanuts,pinch the edges, and shape into a ball.
Place the ball in the mould, press evenly, then knock out and place on greased banana leaf.
Arrange on steaming tray and steam for 10 minutes over high heats( I used medium heat)
Mix icing sugar and ground peanuts. I forgot to sieve the icing sugar.
Then , I used hand to mixed it.
Glutinous rice flour, sugar and rice flour.
Add the mixed flour to the mashed sweet potato.Mixed it.
Adding the water.
Knead to become a soft dough, set a side.
Shape the dough into a bowl pattern, add in the mixed ground peanuts.
Pinch the edges.
Shaped into a ball.
Place the ball in the mould and press evenly.
Knocked out and place on a greased banana leaf, and steam the angkoo kueh.

Salted Egg Whites Fried Rice

I saw Wendy made this salted egg fried rice, looks so good.Thought of trying to make this salted egg fried rice, but then I totally forgot about it, and, until I saw Agnes Chang wrote Salted Egg White Fried Rice recipe in Yum Yum magazine,ya, she used salted egg whites only, and it looks so good too.
So,I follow Agnes recipe(without egg yolks),cause I'm thinking later I'll add another 2 eggs,and that will be too many yolks in the fried rice.And for the ingredients, I added what I had from my fridge.

The tastes was not much different from normal fried rice.Erm....maybe Wendy's fried rice was better than this, cause she added the salted egg yolks.
Anyway, I write down the recipe here, maybe you want to try it too....hehehe..

Here's recipe:
400-500 gm cooked rice
2 tbsp oil
1 tbsp chopped garlic
1 tbsp chopped shallots
2 salted egg whites
2 eggs
1/2 cup of chopped carrots
150 gm shelled prawns
2 tsp fish sauce
salt and pepper to taste
Few dashes of sesame oil
2 tbsp chopped spring onions
1 tbsp chopped chilli padi( bird's eye chilli), optional

In a bowl marinate white rice with salt, pepper and sesame oil.This will give the rice extra flavor and fragrant.This method was taught to me by my last confinement lady.

Put prawns in a bowl, pour some boiling water over the prawns, water level must higher than the prawns, cover, let the prawns slowly cooked.After the prawns cooked, it will turn to red color, dish and drain for later use.

Heat up oil and saute chopped shallot and garlic until aromatic.
Add in carrot, stir fry a while.
Add in seasoned white rice, mix well.
Add in salted egg whites, mix well.
Than add in egg , mix well.
Add in semi cooked prawns, mix it, lastly add in fish sauce and taste it.
If you want to add chilli padi(bird's eye chilli) , you can add now.
Dash some sesame oil and add in chopped onions. Dish up and serve.
 Season the rice with salt, pepper and sesame oil, it gives nice aroma and taste.

Bread Pizzas

As you know, my kids loves pizzas. One day, her friend brought this bread pizzas to the school and shared with her.She quickly asked her friend for the recipe....hehehe.
Back from school, immediately she wrote down the recipe and showed me.
The next day, I went to buy all the needed ingredients, then I went to her school and fetched her, she puts a big smiling face when she saw all the ingredients :)
After lunch, we together make the bread pizza.Its were so easy to make.Tastes so delicious too.
I made this bread pizzas for her breakfast too, she's so happy :)

Here's the recipe:
3 pieces white bread
2 - 3 pieces ham
Some canned button mushrooms, sliced
Pasta sauce
Cheddar cheese.

Pre heat oven 180C.
Spread some pasta sauce onto the bread.
Arrange ham and sliced button mushrooms.
Lastly top it with cheddar cheese.I used block cheddar, you can use sliced cheddar too.
Bake in pre heated oven for 10 minutes.
Let it cool on wire racks, and serve.Easy, right?

They arrange all the ingredients.This is the second time we made it, with my eldest daughter around. 
 The recipe that she recall and wrote down on a piece of paper.
