Vietnamese Fried Chicken Wing

Vietnamese Fried Chicken Wings

This is a sweet and spicy chicken wings.If you want less spicy, reduce the amount of bird's eye chillies ( cili padi).

Ingredients:
6 nos chicken wings
10 bird's eye chillies / cili padi (chopped)
1 sprig curry leaf
Vietnamese Fried Chicken Wings
1 lemongrass (chopped)
2 pcs garlic (chopped)

Marinade:
1/2 tbsp oyster sauce
1/2 tbsp light soy sauce
1 tsp sugar
1 egg
3 tbsp tapioca flour / corn flour

Seasoning:
1/2 tbsp oyster sauce
1/2 tbsp light soy sauce
1/2 tbsp fish sauce
1 tbsp bottled curry powder
1 tbsp chilli sauce
1 tbsp sugar
80 ml water

Method:
Marinade the chicken wings for about 1/2 hour.
Deep fry the marinated chicken wings into hot oil until golden brown, remove and drain.
Leave about 2 tbsp hot oil in the wok.
Saute chopped bird's eye chillies, garlic, curry leaves and lemongrass till fragrant.
Add in seasoning and bring to a boil.
Add in fried chicken wings, stirring constantly at high heat until well combined and the sauce has thickened.
Dish up and serve.

Squid with Snow Peas



Ingredients:
1 squid , about 400gm
Some snow peas, cut into half
Carrot, cut into flowers
1 stalk green onions
2 cloves garlic, smashed

Sauce:
2 tbsp soy sauce   
1 tbsp sugar
1 tbsp black vinegar
2 tsp cornstarch
4 tbsp water

Method:
Clean the squid , and cut into pieces.
Blanch squid in boiling water for about 30 sec. Dish and drain.
Heat up 2 tbsp oil, stir fry garlic, until aromatic.
Add in green onion ( white part only) , carrot and snow peas, cook until the veggies are cooked.
Add in green onion( green part) , stir fry and add in sauce.
Lastly add in cooked squid, cook over high heat , until the sauce thickens.( if the sauce too thick, add more water)
Dish up and serve with white rice.

"Cik Kong" Spare Ribs

I got this recipe from Hawker's Fair Simplified recipe book.

These spare ribs are sooooo yummy.The meat are so tender, the sauce is so tasty.

Ingredients:
600 gm spare ribs/ pork chop, cut into pieces
1 tbsp toasted sesame seed

Marinade:
1 tbsp plain flour
1 tbsp corn flour
1 tbsp shaoxing wine
1 egg
1 tsp baking  soda
1/2 tsp salt
3 tbsp water

Sauce:
2 tbsp black vinegar
2 tbsp tomato sauce
1 tbsp worchestershire sauce
1/2 tbsp chilli sauce
11/2 tbsp sugar
3 tbsp water

Method:
Combine spare ribs with marinade and mix well.Marinade for 30 minutes .
Deep fry the marinated spare ribs in a hot oil till golden brown.Dish and drain.
Pour sauce into a clean wok and bring to boil.
Add in spare ribs, and cook over high heat until the sauce thickens.
Dish up and sprinkle some toasted sesame seeds. Serve.

Salted Egg Whites Fried Rice

I saw Wendy made this salted egg fried rice, looks so good.Thought of trying to make this salted egg fried rice, but then I totally forgot about it, and, until I saw Agnes Chang wrote Salted Egg White Fried Rice recipe in Yum Yum magazine,ya, she used salted egg whites only, and it looks so good too.
So,I follow Agnes recipe(without egg yolks),cause I'm thinking later I'll add another 2 eggs,and that will be too many yolks in the fried rice.And for the ingredients, I added what I had from my fridge.

The tastes was not much different from normal fried rice.Erm....maybe Wendy's fried rice was better than this, cause she added the salted egg yolks.
Anyway, I write down the recipe here, maybe you want to try it too....hehehe..

Here's recipe:
400-500 gm cooked rice
2 tbsp oil
1 tbsp chopped garlic
1 tbsp chopped shallots
2 salted egg whites
2 eggs
1/2 cup of chopped carrots
150 gm shelled prawns
2 tsp fish sauce
salt and pepper to taste
Few dashes of sesame oil
2 tbsp chopped spring onions
1 tbsp chopped chilli padi( bird's eye chilli), optional

Method:
In a bowl marinate white rice with salt, pepper and sesame oil.This will give the rice extra flavor and fragrant.This method was taught to me by my last confinement lady.

Put prawns in a bowl, pour some boiling water over the prawns, water level must higher than the prawns, cover, let the prawns slowly cooked.After the prawns cooked, it will turn to red color, dish and drain for later use.

Heat up oil and saute chopped shallot and garlic until aromatic.
Add in carrot, stir fry a while.
Add in seasoned white rice, mix well.
Add in salted egg whites, mix well.
Than add in egg , mix well.
Add in semi cooked prawns, mix it, lastly add in fish sauce and taste it.
If you want to add chilli padi(bird's eye chilli) , you can add now.
Dash some sesame oil and add in chopped onions. Dish up and serve.
 Season the rice with salt, pepper and sesame oil, it gives nice aroma and taste.

Sweet and Sour Chicken

This sweet sour chicken is a very simple dish and it taste really good. This is a perfect dish for children.Although I had added some chili sauce , but it didn't taste spicy at all.My girls loves this ...Yum yum..

Ingredients:
2 whole chicken drumstick ,clean , remove bone and cut into pieces.
2 pieces of canned pineapples, sliced
1/2 cucumber , sliced
1 onion, sliced
1 tomato, sliced
Some cornflour/potato flour for coating
Oil for deep frying

Marinade:
1/2 tsp salt
1/2 tsp sugar
1/2 tsp sesame oil
1/2 tbsp shaoxing wine ( optional)
1 egg
few dashes of white pepper

Sauce:
100 ml tomato sauce
1 tbsp chilli sauce
1 tbsp plum sauce
1/2 tbsp sugar
1/2 tsp salt
1 tsp white rice vinegar
100 ml water

Method:
Marinade the chicken pieces for about 30 minutes.
Coat the marinated chicken with cornflour/potato flour, and deep fry in hot oil till golden brown.
Dish up and drain.
Leave 1 tbsp oil in wok, saute onion awhile
Add in cucumber, tomatoes and pineapple,stir fry .
Add in sauce and let it boils.
Add in fried chicken and stir fry over high heat until the sauce thicken.
Dish up and serve.

Pork Chops With Fried Onions


This pork lion ribs best to be serve with rice, or you can just eat it alone.The sauce make it more flavorful,and the onion was so crunchy.Here's the recipe:

Ingredients:
500 gm of pork lion, cut into 5mm thickness

1 onion , shredded
Potato/corn flour for coating

Marinade:
1 egg
2 tbsp water
1 tbsp worcestershire sauce
1 tbsp light soya sauce
1/2 tbsp sugar
2 tbsp cornflour

Sauce:
150 ml water
2 tbsp worcestershire sauce
3 tbsp tomato sauce
1 tbsp chilli sauce
2 tbsp sugar
1/2 tsp salt

Method:
Pound pork lion rib with the back of a knife until tender.
Add in marinade and mix well.Set aside for 30 minutes.
Coat the marinated pork ribs with potato/cornflour and deep fry in hot oil,until cooked.Dish up.
Cut the fried pork lion ribs into pieces. Set aside.
In a wok, heat 2 tbsp oil,stir fry the onions till fragrant, add in sauce and cook the sauce until thick.
Dish up and pour over the fried pork lion ribs.Serve.

Pineapple Chicken

You can use spare ribs to replace the chicken.If use spare ribs, that'll be Pineapple Spare Ribs......lols.I tried both,and its same , delicious. For the pineapple, try to fine ripe,sweet pineapple,it goes well in this pineapple chicken, and friendly to your tongue too...haha.Some pineapple, when you eat , can cause your tongue uncomfortable.Here's the recipe:

Ingredients:      
2 chicken whole leg
300 gm pineapple

Marinade:
1/2 tbsp light soy sauce
1/2 tsp salt
1 egg
1 tsp bicarbonate of soda
11/2 tbsp shaoxing wine
1 tbsp water
2 tbsp cornflour

Sauce:
2 tbsp sugar  
3 tbsp tomato sauce
2 tbsp plum sauce
1 tbsp worcestershire sauce
1 tbsp white rice vinegar
150 ml water

Method:
Wash and cut the chicken into pieces.
Cut pineapple into pieces.
Mix the chicken with marinade and marinade for 1 hour.
Deep-fry chicken in hot oil until golden brown and cooked.Dish and drain.
Cook the sauce ingredients until thick.
Add in pineapple and chicken, stir-fry until well mixed.
Dish up and serve.

*If worcestershire not available,you may substitute with 2 tsp soy sauce mix with 1 tsp white vinegar.

Fried Chicken In Chilli Sauce

I like to try new dish,and chilli sauce chicken is one of them.Original recipe don't have much gravy.But, I think in this chilli sauce chicken, I cook the sauce not thick enough, so there's gravy.Anyway, this chilli sauce chicken taste yummy too.Here's the recipe...

Ingredients:
2 chicken whole legs,  deboned and cut into pieces
3 cups oil for deep-frying
1 onion (I use 5 shallots)

Marinade:
1 tsp salt
1 tsp sesame oil
few dash of pepper
1 tbsp cornflour

Sauce:
3 tbsp chilli sauce
1 tbsp tomato sauce
1 tsp sugar
2 tbsp water

Method:
Mix chicken with marinade and marinade for 30 minutes.
Deep fry in hot oil until golden brown.Dish and drain.
Heat up 1 tbsp oil and saute onion(shallots) until fragrant.
Add in sauce and bring to boil until thick.
Add in fried chicken and mix well.
Dish up and serve.

Honey Glazed Chicken With Ginger


Another honey chicken recipe.This dish taste, a little bit sourish (vinegar)and sweet (honey),not much gravy.In  this dish, I love the ginger, I ate it all.Here's the recipe:

Ingredients:    
2 chicken whole legs, cut into pieces
1 tbsp light soy sauce
1 tbsp cornflour
50 gm young ginger,sliced

Marinade:
1/2tsp salt
2tbsp sugar
4tbsp white vinegar

Sauce:
3 tbsp honey
1 tbsp light soy sauce
2tbsp marinated ginger juice
2 tbsp water  

Method:
Mix the young ginger with marinade and season for 1 hour.
Mix chicken with light soy sauce and corn flour.
Deep-fry the chicken in hot oil until cooked and golden brown.Dish and drain.
Pour sauce into a pan, add in drain ginger pickles and cook at low heat until thick.
Add in fried chicken, mix well and dish up.Serve.

Pan Fried Tomyam And Lemongrass Chicken


This is one of my family favourite dish.Taste sourish and little bit hot, due to the tomyam paste.
Here's the recipe:

Ingredients (A):
2 chicken whole legs, deboned and cut into pieces.(but I didn't deboned mine)
2 tbsp butter.

Marinade: 
1/4 tsp salt
1 tsp sugar
Dash of sesame oil
Dash of pepper
1 egg, slightly beaten
1 tbsp cornflour
1 tbsp plain flour

Ingredients (B):
1 tbsp chopped lemongrass (finely chopped)
3-4 chilli padi, chopped
3 kaffir lime leaves,chopped finely
1 tbsp tomyam paste.
100 ml water

Method:
Mix chicken with marinade and season for 30 minutes.
Melt butter, add in chicken and pan-fry until golden brown.
Add ingredient (B)  and stir-fry until aromatic.
Add in 100 ml water and continue to fry until dry.
Dish up and serve.

Fried Chicken With Salted Egg Sauce



Ingredients:
2 chicken whole legs, cut into pieces
1 cup oil for deep-frying

Marinade:
1/2 tsp salt
1/2 tsp sesame oil
Dash of pepper
1 tbsp water
1 tbsp cornflour
1 tbsp plain flour

Sauce:
2 salted egg yolks, steamed and smashed
2 sprig curry leaves
4-5 chilli padi, chopped
200 ml evaporated milk

Seasoning:
1 tsp sugar
Dash of pepper

Method:
Mix chicken with marinade and marinade for 1 hour.
Heat up oil for deep-frying, deep fry the chicken until golden brown and cooked.
Dish and drain.
Leave 1 tbsp oil in wok, sitr fry mashed egg yolks, curry leaves and chilli padi until fragrant.
Add evaporated milk, seasoning and bring to boil.
Add in the fried chicken and stir fry until well mix and the sauce has thickened.

This recipe used 200 ml of evaporated milk, which , you can see into the photo, quite gravy.
 er...but my kids just loves the gravy and the chicken was so tender.
Maybe next time I'll use 100 ml of evaporated milk, for a drier dish.

Plum Sauce Chicken With Garlic Flakes



The recipe was very easy.Use little ingredients, but tasted so goooooood.The garlic flakes, mixed with the gravy so yummy. Here's the recipe.
Ingredients:
2 chicken whole legs (cut into pieces)
8 - 10 cloves garlic (peeled and sliced thinly)


Marinade:
1 tbsp light soy sauce
1 tbsp shaoxing wine
2 tbsp cornflour

Sauce:
6 tbsp water
4 tbsp plum sauce
1/2 tsp sesame oil
salt to taste

Method:
Mix the chicken with marinade and marinade for 30 minutes.
Mix the sauce and set aside.
Deep fry sliced garlic into hot oil until golden brown .Dish and drain.
Deep fry marinated chicken into hot oil until golden brown and cooked. Dish and drain.
Cook sauce in a wok untill thick.
Put in fried chicken and mix well.
Put in 1/2 of fried garlic.Keep the remaining garlic for topping.
Dish up, sprinkle the other 1/2 fried garlic.
Serve.

Fried Prawns With Cereal


This is one of OUR favourites,especially my girls. I use instant cereal to cook this dish.

Ingredients:                                                                            
12-15 big prawns
6-10 chilli padi (chopped)
2 sprig curry leaves
2 tbsp butter ( I used marjerin)
A packet of 'Instant Crispy Prawn With Cereal'
Potato/corn flour for coating
Some salt and pepper
Oil for deep frying

Method:
Clean prawns, trimp off the head , shell and tail.I used big prawns, so I halved the prawns.
Add some salt and pepper.
Coat the prawns with potato flour.
Heat up the oil for deep frying.
Deep fry the prawns until cooked.Dish up and drain
Discard oil, clean wok.
Over low heat , add 2tbsp butter/marjerin, add chilli padi and curry leaves.Stir fry untill fragrant.
Add prawns and instant cereal.Toss it up, till the cereal turn brown and crispy.
* Becareful, only use small fire , otherwise will easily get burned.
